Rinaldo’s passion for food and hospitality began in Florence, Italy, where, at just 15, he started as a server and bartender at the historic Hotel Corona D’Italia. Immersed in the rich culinary traditions and wines of his hometown, these early experiences shaped his refined palate and enduring love for authentic flavors.
After Florence, Rinaldo moved to Sonoma County, California, where he continued honing his craft as a bartender, exploring the region’s renowned wineries and eclectic cuisine. His career then took him to Las Vegas, Nevada, where he advanced through the ranks with MGM International and collaborated with some of the city’s most celebrated restaurateurs. Today, based in Nashville, Rinaldo brings his global culinary perspective to every guest experience. When he’s not working, he enjoys quality time with his family or playing soccer.
Rinaldo began his food and beverage career in Florence, Italy. At the age of 15, Rinaldo was hired as a server/bartender for Hotel Corona D’Italia. The experiences and memories of the food and wine he experienced in Florence molded who he is today.
After leaving Florence, Rinaldo moved to Sonoma County, CA, and continued his career as a bartender. He took in the California lifestyle by visiting the surrounding wineries, enjoying new eclectic dishes, and working as a bartender before his budding career took him to Las Vegas, NV.
While living in Las Vegas, Rinaldo found himself rising through the ranks of MGM International and working with famous restaurateurs. It was in Las Vegas that Rinaldo’s skills and dreams came together. Now living in Nashville, when Rinaldo isn’t working, he’s spending time with his family or playing soccer.
Executive Chef | KONSTANTIN RUBIS
Executive Chef Konstantin Rubis began his culinary journey in Siberia, honing his skills across Europe and California before making Music City his home. With years of experience developing restaurants in world-class resorts, historic hotels, and fine dining establishments, Chef Rubis now leads the culinary team at Trattoria Il Mulino Nashville, part of the iconic New York–based Il Mulino family.
Classically trained at the prestigious European Culinary Academy, Chef Rubis specializes in contemporary American and Mediterranean cuisine, blending creative flair with a highly curated approach to achieve culinary excellence. His accolades include the Forbes Four Star Achievement Award, the Leadership Excellence Award, and Wyndham International’s 2007 Silver Spoon Award. While his career has taken him around the globe, Chef Rubis has called Nashville home for the past 20 years, guiding Trattoria Il Mulino to its celebrated place in the city’s vibrant dining scene.
Executive Chef Konstantin Rubis began his culinary journey in Siberia followed by stops throughout Europe and California, ultimately making his way to Music City. A career highlighted by his years of experience developing restaurants in world class resorts, historic hotels and fine dining operations has brought him to lead the culinary team at Trattoria Il Mulino Nashville, a part of the iconic Il Mulino family of restaurants based in New York City. Specializing in contemporary American and Mediterranean cuisine, Chef is classically trained at the prestigious European Culinary Academy. He combines creative flair with a highly curated approach to achieve culinary excellence. Chef Rubis is a recipient of the Forbes Four Star Achievement Award and has been honoured with the Leadership Excellence Award as well as Wyndham International’s 2007 Silver Spoon Award. While his career has taken him all over the world, Chef Rubis has called Nashville home for the last 20 years and has steered Il Mulino to its place in the local dining scene.
